White orthorhombic or crystalline powder. Odorless, slightly-sweet taste. It melts and decomposes at 253. It decomposes with dilute alkali at high temperature. It decmposes gradually with acid. Soluble in water, insoluble in ethanol, ether or chloroform. Isoelectric point is PH 6.16
