Dual automatic falling number test instrument is used to determine the Alpha Amylase activity in the wheat and wheat products.
Used to determine the bread quality of flour. Alpha amylase enzyme that is constitute depending upon the climatic conditions in the region where the wheat is cultivated significantly affects the quality of wheat, thus the bread quality of wheat after it is ground into flour. Dual automatic falling number test instrument is the only way to determine the alpha amylase activity. The amount of enzyme and net rate of dough may only be determined using the Dual automatic falling number test instrument.
