Citric Acid A colorless translucent crystalline acid,principally derived by fermentation of carbohydrates or from lemon, lime, andpineapple juices and used in preparing citrates and in flavorings and metalpolishes. It is used as a flavouring and preservative in food and beverages,especially in soft drinks and medicine. Citric acid and its salts are widelyused in the food and pharmaceutical industries because they are nontoxic, safeto handle, and easily biodegraded.
